Magic Weather. Celebrating with Caramel Apples!

Well, it’s almost that time of year. The time when you innocently leave your house one morning to discover it’s cool.

Now I know in some other parts of the country it’s already downright cold (at least to this Florida girl). But we have nearly 9 months of summer every year here. So we wait and wait and wait … and when it happens? It seems as though all is right with the world and nothing can go wrong because you can FINALLY wear pants outside, and all your long sleeves can come out of storage, and all my favorite holidays are on the way! My roommate has coined the term “magic weather.” And you know what? It really does feel magical.

Last year to celebrate magic weather (and halloween, as they happened to coincide), I threw a get together for a bunch of my friends. Caramel applies, popcorn balls, delicious bread and bean soup for dinner… basically a celebration of all things fall.

I’m hoping by posting about this earlier this year it will make the weather come sooner. So here are some pictures from last year. A great time was had by all. And I can’t wait for magic weather this year!

 

Caramel Apples (from Martha Stewart!)

  • 1 cup granulated sugar
  • 1 1/4 cups heavy cream
  • 1/2 cup light corn syrup
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 10 to 12 small apples, stems removed (I only got 9-10 out of the recipe)
  • Vegetable-oil cooking spray
  • Round wooden skewers
Directions
Heat sugar, cream, corn syrup, and butter in a saucepan over medium-high heat, stirring until butter has melted. Clip a candy thermometer to side of pan, and continue to cook until mixture reaches 240 degrees. Remove from heat, and stir in vanilla. Let cool for 5 minutes.

Line a baking sheet with parchment paper, and coat with cooking spray. Insert a skewer into stem end of each apple. Dip apples in caramel, and place on sheet. Let stand until set, at least 1 hour. Apples can be stored airtight for up to 1 day.
