French Croissants: a lesson in patience.

If you ask any of my friends, I am not a patient girl. Normal things like waiting in line, waiting for food at a restaurant I have no problem with. But when it comes to my life – making progress, making decisions, solving problems – I want to do it NOW. I am not one to hang around and wait it out. If there is something I can do, I will do it right now without waiting for anyone or anything.

It is very rare in cooking that I encounter something that brings out my impatient side. But croissants? They did it.

I was inspired to try to make these by a friend of mine from high school. Her name is Felicia and she is constantly cooking for her family – and posting delicious pictures. She also happens to own a pretty rockin’ custom cake business – Divine Desserts. So if someone this gifted in the kitchen tells me I can do it? I’m liable to try just about anything. She linked me to a great tutorial, and I thought “If she can, I can!” And off I marched into the culinary unknown.

And that is how I wound up trying my hand at french croissants for the first time. And as usual, I made the crucial mistake of not reading the entire recipe before I started. Which in this case was probably a good thing as there is an overnight wait involved. Yes, I said OVERNIGHT. But it was worth it. And all my kids at work agree. And all my friends agree. And my hips 100% agree.

Felicia sent me to Iron Whisk for my recipe. Iron Whisk recommended Fine Cooking. And between the two, I did it! And dear god were they delicious.

Now typically, I would copy in the recipe from the site I used and add my notes. However, there are just too many darn steps for that. So visit Iron Whisk and Fine Cooking! Read the recipes THOROUGHLY before starting. As you look through pictures, the ones with almonds on top I just filled with almond filling. If you do have questions about what I did, comment and I’ll answer! But I am by no means the most experienced at this yet.   1. These look absolutely amazing! My hat is off to you for bearing with the process and finding the patience to make these from scratch. I’ve always wanted to give it a try, but haven’t really found the inspiration until now. Thanks so much for sharing your recipe – and those beautiful photos – with everyone.

    • Thank you so much! You really should feel inspired – mostly because the minute you realize you did it? You will probably dance in your kitchen. Plus, everyone who eats one will be uber impressed.
